Bourbon Barrel-Aged Cabernet Sauvignon, Rum Barrel-Aged Merlot & Rye Barrel-Aged Red Blend
Bourbon, rum, and rye barrel-aging describes the process of aging wines in oak barrels that were once used to age bourbon, rum, or rye. Wood is porous, so bourbon or rye aged in these wood barrels, they soaked in notes of oak from the wood and the wood absorbed flavors from the bourbon, rum, or rye.
By aging our rich, fruit-forward Cabernet Sauvignon, Merlot, and Red Blend in barrels repurposed from High West’s bourbon, rum, and rye barrel rooms, the wines are not only imparted with notes of toasty oak from the wood, but this process also slowly layers the wines with flavorful bourbon-influenced notes of vanilla, cornbread and light caramel and rye-influenced hints of smoke, gingerbread and sweet mesquite.
