Turkey Sushi Roll

"Leftovers are some of my favorite ingredients. They are already made, and the fact that they were worth saving guarantees they taste great! I wanted some way to trick out the classic holiday leftovers without making a sandwich. Behold, the sandwich of Japan, the sushi roll! Ingredients for the Dish
1 half sheet of nori
5 oz mashed potatoes, chilled
2 oz turkey, shredded, chilled
1 oz prepared cranberry sauce
1 Tbsp butter
1 Tbsp soy sauce
2 pinches AP flour
For the Preparation: On a plastic wrap-covered place mat or plastic wrap covered sushi mat, place the nori, uneven side up. Using gloved hands, work quickly to spread the mashed potatoes over the nori, leaving ¼ of an inch on the side farthest from you. Flip the nori over and arrange the turkey and cranberry sauce in a line down the middle, long ways. Gently use the mat to roll up the roll. Cut the roll in to 6 or 8 pieces and refrigerate until ready to eat.
In a small sauce pan combine the butter and soy sauce. Heat until the butter is melted, approx. 45-60 seconds. Gently whisk in the two pinches of AP flour. Behold, soy gravy. Pour a glass of Robert Mondavi Private Selection Chardonnay. Drizzle the gravy over the roll and devour.
