Bourbon Barrel Aged Cabernet and Fudge Cookies

INGREDIENTS:

  • 1 ½ cup sugar
  • 1 cup cocoa powder, unsweetened
  • ½ cup vegetable oil
  • 4 eggs
  • 2 tsp vanilla extract
  • 1 Tbsp Robert Mondavi Private Selection Bourbon Barrel-Aged Cabernet Sauvignon
  • 1 ¼ cup flour
  • 2 tsp baking powder
  • ½ tsp salt
  • ¾ cup powdered sugar


INSTRUCTIONS:

In a bowl, combine flour, baking powder, and salt. Set aside. In a separate bowl, mix together sugar, cocoa powder, and oil. Beat in eggs one at a time until combined, then stir in vanilla. Slowly add in flour mixture until thoroughly mixed. Cover bowl and refrigerate for 4 hours.

Preheat oven to 350°F. Roll dough into balls, about one inch. Roll ball in powdered sugar and place about 2 inches apart on parchment paper-lined baking sheet. Bake for about 10 to 12 minutes. Allow cookies to cool slightly then transfer to wire rack to finish. Serve with a glass of Robert Mondavi Private Selection Bourbon Barrel-Aged Cabernet Sauvignon.
